The Protein "Bread" everyone keeps talkin' about!

I get asked about this recipe on a weekly basis, so I figured it deserved a blog post!  This way you can have it forever!  My sister is actually the one who created this delicious recipe!  She has celiac disease and wanted to make a bread she could enjoy without fear of getting sick.  I have oats in my bread, but you can always add almond flour or GF oats if you desire. 

INGREDIENTS: 

5 eggs

1/2 cup of raw pumpkin seeds

1/2 cup of chia or hemp seeds

1/2 cup of pecans

1 tsp of vanilla extract

15 oz of cottage cheese

1 small container of plain Greek yogurt

2-3 cups of oats (use as much as you need to create a batter you can work with)

THE RECIPE:

Whip eggs smooth.  Stir in seeds and pecans.  Add vanilla, cottage cheese, and yogurt.  Stir.  Add oats slowly, continuing to stir.  Add desired amount to make the batter firm to form patties.  

Spray a baking pan and make about 10 patties.

Bake at 375 degrees for 12 minutes or until golden brown on top!
