- 1 1/2 cups whole wheat flour

- 1/2 teaspoon baking soda

Instructions:

- Gradually add the wet ingredients to the dry ingredients and mix until just combined. Don't worry about all the flour being mixed ... you want to be sure not to mix too much!
- Add the zucchini and walnuts to the batter.
- Pour the batter into the loaf pan, add a few walnuts to the top and bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool before slicing and serving.
